This recipe was a big hit on Thursday! Natalie chose the recipe and we all cooked!
1 large head cauliflower cut into medium florets
2 TBSP butter
3 TBSP all-purpose flour
2 C half and half or milk
1 clove garlic-minced
2 C grated cheddar cheese
1/2 C nutritional yeast
2 egg yolks
1 1/2 C Panko breadcrumbs
Salt and pepper to taste
Cayenne pepper to taste
Preheat oven to 350
Bring large pot of water to boil.
Add cauliflower and boil 5-7 minutes or just until tender. Drain reserving 1 C cooking liquid and set aside.
Melt butter in same pot over medium heat. Whisk in flour and cook 1 minute stirring constantly. Whisk in milk, garlic and reserved cooking liquid and cook 7-10 minutes or until sauce is thickened whisking constantly. Remove from heat and stir in cheese, nutritional yeast, ande egg yolks until cheese is melted. Salt and pepper to taste. Fold in cauliflower.
Coat 9 x 13 baking dish with cooking spray. Spread cauliflower mixture in baking dish and sprinkle with breadcrumbs. Bake 30 minutes until hot and bubbly and breadcrumbs are crisp and brown.
